Method

Melt the chocolate and butter

The chocolate should be melted and smooth, but not hot when added to the eggs.

  1. Melt the dark chocolate and butter together using a double boiler or in the microwave in short intervals, stirring between each interval. Set aside and allow the mixture to cool slightly.

Whip the eggs and sugar

This is the key step for achieving the signature shiny, crackly brownie cookie top. Make sure the eggs and sugar are well beaten.

  1. In a large mixing bowl, beat the eggs and granulated sugar with an electric mixer for approximately 4–5 minutes, until the mixture becomes pale, thick, and fluffy

Add the melted chocolate

  1. Slowly pour the slightly cooled chocolate mixture into the whipped egg mixture. Add the vanilla and mix until combined.

Fold in the dry ingredients

Do not overmix. Stop as soon as the ingredients are combined.

  1. Sift together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the chocolate mixture using a spatula. Add the chocolate chips if desired.

Scoop the cookie batter

The batter should resemble a thick, glossy brownie batter. Do not chill it before baking, as it may become too firm to spread properly.

  1. Line a baking tray with parchment paper. Immediately scoop tablespoon-sized portions of batter onto the tray, leaving approximately 5–6 cm of space between each cookie.

Bake the cookies

Do not overbake! The centers should remain soft and fudgy. The cookies will continue to set as they cool.

  1. Bake in a preheated oven at 175°C (350°F), conventional top and bottom heat, without the fan, for 8–10 minutes. The cookies are ready when: The tops look shiny and have developed cracks. The edges look set. The centers still look soft and slightly underbaked.

Let them cool

The cookies will be very soft when they first come out of the oven. Avoid moving them too soon, or they may break.

  1. Remove the tray from the oven and leave the cookies on the baking tray for approximately 10 minutes before transferring them to a wire rack.
